This is a little odd for a Chicago menu, but Chicago and Wisconsin also grew a lot from the Great Northern Migration of people from the South during and after the War to end all War.
Underneath the two eggs (not egg whites or I can’t believe those aren’t eggs) is Country Fried Steak with Sausage Gravy. If that isn’t in your normal died, Country Fried Steak is some piece of beef you probably don’t want to know about that is breaded with roughly the same thing you bread fried chicken with – with perhaps a little more pepper – then deep fried.
Of course a large serving of hash browns and toast (I could have had pancakes instead) and a sugary soft drink.
Country Fried Steak, in the South, is a less than tender steak, Bottom Round, that has been mechanically ‘tenderized’ (pounded). Generally, Bottom Round is slow roasted several hours (think Arby’s Roast Beef sandwich), but when fried it would be very chewy, tough if not tenderized. Country Fried Chicken is also popular but it is not ‘tenderized’.
Anyway, back in the day when my grandfather raised beef cattle, slaughtered and dressed on his farm, we never knew just how well we had it. His beef was similar to Kobe style beef, very tender, very flavorful. The fat was left on his steak cuts, generally 3/4″ thick. It was very white and firm. My parents never trimmed off the fat, and would always broil our steaks. The fat would become very crispy and was always eaten and greatly enjoyed along with the meat. Since we had a large family we generally only had about 10-12 steaks per person each year.
It’s a shame you died at such a young age. 😉
For the picky folks, this is also called Chicken Fried steak – it’s mostly a regional difference – also whether it is pan fried or deep fried. The way you know I’m not actually in the South is no grits.
As I was poking around on the web, I chuckled at a “recipe” using beef tenderloin. It amuses me when rich people pretend to eat poor people food. I wonder if they have a recipe for chitlins…
I have lived beyond the expectations of my opponents, but I am doing all that I can possibly do to accommodate their hopes by raising tobacco and smoking it as fast as possible. I have added another 40-50 pounds to my stash from this seasons crop, so this could be my last post, who knows for sure?
Chitlins? Grits? Hominy? Red-Eye gravy? Fried Okra? Cornbead and its kissin’ cousin, Spoon Bread. Yes, definitely Southern cooking.

Look forward to any other interesting posts of the meals you choose to eat, and have wondered if you all have any Cracker Barrel restaurants in Chicago? I know of one in the far northwest in Missoula.
Oh, Cracker Barrel is probably my favorite chain restaurant, even with its faux authenticity. Last time I was in one, I spotted Mallo Cups, one of the basic food groups. Other than the lines, my only complaint was they “caved” when the FDA forced restaurants to only sell hamburger if it was cooked to death. That was a year or two after the FDA approved the process now somewhat known as pink slime – that gets an extra few pounds per animal be scraping the bones clean.
According to my cell phone, there is one about 30 miles from here. Another on my list is Hardee’s. from Connecticut, the closest was over on the PA Turnpike, like a 2 1/2 hour drive. Closest one here is an hour away. Maybe I’ll celebrate something there 😉

That’s looks good Art ! I like a good stick to your ribs breakfast. Interesting that you have toast instead of a biscuit. Maybe that is your personal preference.
Here in VA. you could have biscuits with that good meal.
I like toast, but I choose biscuits, when homemade any day of the week over toast.

My hubby’s favorite meal is my country fried steak and gravy. Yummy and very fattening! We have it maybe three times a year…
